Triple Weekend! And not a wedding in sight!

Saturday saw a very busy day for the KF team, with 3 different events and over 600 clients to feed, organising everything was a small feat in itself! But once again with the help of a very professional team it went without a hitch!
So Jodie, Holly and Josh helped make Jeremy and Shelia’s joint birthday and ruby wedding anniversary a success at the Holly Bush in St Albans, with MJ cooking the barbecue and serving canapés to 60 guests in the beautiful garden. The perfect warm summers evening was filled with laughter and funny gifts including a blow up Zimmer frame, everyone seemed relaxed and enjoyed the food and the celebration.

Dan, along with our newbies to the kitchen, Ian & Rosie served a 3 course meal at a charity event in Stevenage. The marquee looked beautiful and the food delicious. Lots of money was raised for Cancer Research.

Ian said afterwards “It was a pleasure for rosie and I do ” do something different ” maybe, but I want you back front of house with me next week thankyou!

Lastly, John and I went to the delightful Samantha & Sean’s beautiful house in Radlett to serve canapés, drinks and bowl food to 120 friends and family celebrating Samantha’s 40th Birthday. We have catered for them before, always lovely to be asked back, makes us sure we are doing it right!
Marquee in the garden complete with cocktail bar, Samantha in a stunning gold dress, sun shining, and my team of 10 fantastic waiters and waitresses, made for a great combination.
Bowl food always a tricky one with lots of prep and hands on for John, but Tom, Joel and Ollie made light work of being sous chefs for the evening! Champagne flowed, the band rocked and everyone enjoyed the celebrations into the early hours!
Of all the mini bowls we served; Sirloin of Beef, Parmentier potatoes, bernaise sauce or Slow cooked Lamb Shoulder, Greek Salad Tzatziki, or Thai Green Curry with sticky coconut rice, always, always the Haddock, homemade chunky chips and tartare sauce is by far the most popular! We had them coming back and back to the kitchen for more until there wasn’t a chip left!

So another busy week ahead, charity dinner for over 400 this Saturday with a team of 35 front of house staff for me to look after! The bigger the challenge, the higher we jump! Thankyou to everyone who made last Saturday the success it was, let do it all again this week!

Happy Couple, Tipis & Sunshine! Perfect!

We had a fantastic day yesterday for Sally & Terry’s wedding. Tipis set at the top of the hill at North Hill Farm, Chorleywood, overlooking beautiful rolling countryside. The sun shone, the champagne flowed and the food was delicious!

The Tipi was dressed with loads of wild flowers and tree stumps which accentuated the country theme. with hay bales and a bonfire lit after dark it was the perfect rustic setting.

Their chosen menu was Ham Hock Terrine, Mini Cheese Scones, Candied Apple Purée & Salted Crackling followed by Lamb Kleftico, Roasted Baby Potatoes & Greek Salad. Dessert was a trio of Sticky Toffee Pudding, White Chocolate and Hazelnut Blondie, Summer Fruits Eton Mess, Blossom Honey, Strawberry Shortbread. Delicious!

After the meal we moved all the tables out into the early evening sunshine for the guests to relax and enjoy the view. With dancing to a live band, a huge chocolate fountain and a bonfire ended the perfect day!

1st Wedding of the Season!

Yesterday saw the Kingfisher team back together for the wedding of Michael & Madeleine at the beautiful Nether Winchendon House. We were all so excited! Ian & Rosie, Jodie, Amelia, Josh & our newbie Anna, front of house, John & Stuart cooking up a scrumptious wedding breakfast out back!
Bride was traditionally late, making poor Michael even more nervous than he already was! The ceremony took place in the barn which we then had to clear and lay up very quickly for them to be seated for dinner. As usual the team worked their magic and we did it with time to spare! It looked beautiful with all the bunting and wild flowers!

While we set up they enjoyed Canapés of Crispy Pork Belly, Spiced Bramley Puree; Mini Yorkie Pud, Beef Fillet, Horseradish and Watercress Cream; Cumberland Sausage, Honey and Beer Mustard; Tempura Tiger Prawns, Sweet Chilli Bruschetta, Vine Tomato, Rocket Pesto (v) Vegetable Spring Roll, Plum Sauce, all washed down with chilled Prosecco.

They then enjoyed a three course Wedding Breakfast of Roasted Butternut, Sun Blushed Tomato and Goats Cheese Tartlet, Roasted Pepper Tapenade, Rocket Leaves, followed by Braised Shank of Lamb, Buttered Mash, Redcurrant and Mint Jus, Crispy Leeks, Buttered Vegetables, and finished with a Trio of Desserts consisting of Treacle Tart, Eton Mess & Lemon and Blueberry Cheesecake. It looked and smelt delicious!

We then cleared the barn again for the evening entertainment to begin and drinks and dancing completed a very happy day!

All of us agreed it was great to be back doing what we love so much! I think we enjoyed the day almost as much Michael & Madeleine!

So onto next week now, 2 weddings this Saturday, one at Brook Farm and one in Hertford! Busy busy for the team, let’s hope they are a great success like Saturday! Well done everyone!

Behind the scenes at KF headquarters!

I’m aware I’ve been quiet lately with my blog, sorry, we haven’t been putting our feet up! far from it!
Behind the scenes we have been finalising numbers, menu choices, staff, logistics with all our lovely couples getting married this year.
We have had lots of couples and families in for tastings both for dates this year and next, and have 5 booked weddings in the diary for 2015 already!
Our lovely John is back from Tudor Oaks and with us again in the kitchen, we have missed him! His cheeky smile almost as much as his superb food!
So our first wedding of the season is in less than 2 weeks at the beautiful Nether Winchendon House for the lovely Michael & Madeleine.
We are all chomping at the bit to get into the season again, although with 37 weddings and events booked from now till November it’s going to be a busy one!
We are all a teeny bit excited though!!

Kingfisher, Tudor Oaks Lodge! Busy busy!

Even though the Wedding Season is still a few months away, you maybe mistaken by thinking we were all relaxing! But far from it! the Kingfisher team have been very busy indeed! Working closely with the new owners of the beautiful Tudor Oaks Lodge in Stotfold, Bedfordshire, getting ready for the opening this Thursday!
Under new management, the 15th century coaching inn has been revamped to offer a place to enjoy a meal or drink or a special stay in one of the en-suite bedrooms situated around the beautiful Mediteranean courtyard.

The grounds also offer space for Wedding Receptions, Bar Mitzvah, Birthday, Anniversary or Party. The Tudor Room seats up to 80 people – set in the main house, and The Norman Suite seats up to 225 people – barn style suite with a beautiful galleried balcony floor overlooking the dance floor.

Dan and John have worked hard getting the catering side up and running and have put together some beautiful dishes from a mouth watering 3 course menu to delicious sides and bar snacks, traditional burgers and steaks, to a Sunday carvery to make anyone want to go out for lunch and not doing the washing up!

Some of the menus choices are;
Starters:
Beetroot Gravadlax, Celeriac and Coriander Remoulade Capers, Lemon Oil and Ciabatta,
Or, Chicken Liver and Madeira Parfait, Toasted Sourdough, Cornichons, Red Onion Chutney, Or, Warm Caramelised Onion, Roasted Butternut and Haloumi Tart, Herb Salad and Rocket Pesto.
Mains:
Braised Shank of Lamb served on Sticky Root Vegetables and Herb Potatoes,
Or Crispy Pork Belly, Curly Kale, Chantennay Carrots, Sage Butter Lyonnaisse, Cider Jus Or Pan Roasted Chicken Breast, Roasted Sweet Potato and Parsnips, Green Beans, Pancetta and Madeira Jus.
Deserts:
Dark Chocolate Delice, Walnut Brittle and Vanilla Ice Cream
Or Lemon and Lime Tartlet, Glazed Berries and Crème Fraiche
Or White Chocolate and Coconut Cheesecake, Pistachios and Mango Sorbet

To add to the fun Friday night party nights are taking place with the first this Friday! They are perfect for those celebrating a special occasion or those who just fancy a night out. Ticket price will include a KF buffet meal. Party nights will on occasion include Greek nights, tribute nights & more!!

KF Appoints a New Head Chef!

So after 2 years of working with us we are pleased to announce that the fantastic John has agreed to be our full time head chef!
After working at various places over the years including Head Chef at the Seaview Hotel on the Isle of Wight, a 2 x AA Rosette restaurant that won dinning experience of the year in 2010; Sous Chef at Madishead, a 1 x AA Rosette restaurant in Norwich; Head Pastry Chef at Oneup, a 2 x AA Rosette restaurant, also in Norwich; and Chef at the award winning Lake Restaurant at St Michael’s Manor in St Albans; John brings a wealth of ideas and fantastic skills to our ever developing kitchen.
Dan & John worked on the new menus before Christmas and I’m pleased to say our critics have raved about them! Also all of the 2014 couples who have been in for tastings have loved the style and finesse that John adds to the delicious dishes.
Not only is he a great inspiring chef but an absolute pleasure to work with, bringing fun & laughter to the events.
Welcome aboard John, here’s to a successful, enjoyable year! Cheers!

Rump of Lamb, Shepherds Pie, Vegetable Dauphinoise!

So Saturday saw the KF team in Henham Village Hall, for Dan & Katie’s village fete style wedding! Beautifully dressed village hall with bunting, homemade cakes and homemade cocktails! Mixed to perfection by Jodie!

Both cocktails were created by the bride & groom to show their individual style. So Dan’s ‘The Big Apple’ was made from Apple & cinnamon infused whiskey, pressed apple juice & ginger beer. And Katie’ ‘Henham Hedgerow’, vodka with fresh blackberries, elderflower, mint & soda.
Katie & Dan arrived in a camper van in true style of the day! Guests enjoyed the cocktails and canapés despite the drizzly rain. They were then seated for a wonderful 3 course wedding breakfast of anti Pasti boards of Proscuitto, salami Milano, chorizo, olives, artichokes, marinated roasted peppers and bruschettas.
Main course was delicious, cooked to perfection, by John & MJ in probably the smallest kitchen we have ever worked in!
Rump of Lamb, mini shepherds pie, root vegetable dauphinoise, green beans and redcurrant jus.

Desserts supplied by friends and family of Apple pies, cheesecakes, fairy cakes topped off the meal with tea & coffee.
We then cleared the room to make way for lots of dancing and did they party! Even grandma was tapping her feet!

Another great wedding weekend, last one for a while for us, now getting prepared for those Christmas corporate parties!!
