Dear Kingfisher Caterers

My name is Simon, I am a junior doctor working at Luton Hospital on one of the COVID wards.

Like many of us there, we don’t live in the area but have travelled to help during the crisis. We’re living in small hotel rooms or wherever someone will have us.  So it’s really hard for us to get food and we live off cheap takeaways and snacks.

I cannot overstate how much we appreciate being able to have a decent hot meal in the evening.

It is an absolute highlight when people like you generously provide us with meals.

Also, not just a hot meal, but a REALLY good meal (you do know you could just serve us any rubbish?)

Im from Cumbria originally and that it is one of the finest sausages and mash Ive ever had, great gravy.

Being able to come down from a busy ward to be given a seriously good food from my childhood makes it a lot easier to cope in these times.

It is amazing to see people like you help out.

Our business has changed dramatically in the last month just like the rest of the world as we knew it! The initial shock of our full summer of weddings and events being turned on its head in a matter of days put us all in a tailspin. But keeping positive has always been our mantra, so when Dan contacted @mealsforthenhs and asked if we could help, they quickly said yes!

We sourced biodegradable, microwavable meal boxes, came up with sticker designs and got to work. So far this week we have sent out 2 deliveries to Luton & Dunstable Hospital. On Saturday we dropped 100 meals of with Shepherds Pie with Green Beans and Sausages with Mash and gravy. Last night 120 boxes of Chicken, Thyme and Vegetable Ragout, with crushed new potatoes and a delicious Roasted Vegetable Lasagne served with Garlic and Rosemary Bread.

Keep the orders coming NHS, we are loving doing our bit to help our heroes!

You can’t save the nation on an empty stomach.


Help buy meals for the NHS staff fighting COVID-19

After 18-hour shifts trying to save our lives from COVID-19, NHS Hospital Staff are faced with canteens that shut at 5pm. They are asking for donations and caterers like us to supply hot meals.

Today we received our first order for meal deliveries for NHS and will be providing 100 hot meals for NHS workers at Luton and Dunstable Hospital this Saturday 18th April and Tuesday 21st April. We will continue supplying for as long as we can help our fantastic NHS.

We are delighted to be part of this great campaign.

Kingfisher Cooks at Home – Part 2!

John our very talented head chef has been spending his time at home creating some new dishes for you to cook at home! These are easy cook recipes that you can follow and cook yourself ! So please try these out, we would also love to see any pics of your finished dishes! Send them to us at and I will post in our Social Media. Enjoy!

Today’s dish:

Smoked Haddock Chowder


1 small onion
1clove of garlic
300ml veg stock
300ml milk
2 medium potatoes
1 small cup of sweetcorn
200g smoked haddock
1 teaspoon of plain flour
Knob of butter
Sprig of parsley (chopped)

This super simple soup is quick to make and is ready in about 20 minutes. Smoked haddock is one of my favourite ingredients to cook with as it’s full of flavour; it’s lovely and light, perfect for a sunny Spring afternoon.


1. Finely dice the onion and crush the garlic. Soften in a pan with a little butter.

2. Add a teaspoon of plain flour and cook for 2 minutes on a low heat. If the mixture starts to colour, remove from the heat.

3. Pour 300ml of liquid vegetable stock into the pan. Add the potatoes.

4. Cook until the potatoes are starting to soften. Add the milk and sweetcorn and then simmer for 5 minutes. The soup should have a fairly thin consistency- if it looks too thick, add another splash of milk.

5. Add in the diced haddock. Simmer for about 2 minutes (until the fish is just cooked).

6. Season with salt and pepper to taste then stir in the chopped parsley.

Serve with your favourite crusty bread.

With the temperature soaring and all of us stuck at home, I thought I would share some summer BBQ pics from the last few years. A BBQ meal for your wedding breakfast is a great choice, it combines the element of sharing platters for your guests but also not only gives a selection of delicious flavours but a great array of summer colour. From delicious salads to marinated meat or fish skewers and everyones’s favourite Halloumi and Roasted Peppers! 😎 😍

Friday Positivity!

A special shout out to all couples who were supposed to be getting married tomorrow, 😢 all of us here at Kingfisher really feel for you as we are also missing doing what we all love most . . . catering and assisting with your special days.

But let’s keep positivity going! you will all get your special days, maybe not exactly the date you had planned but they will happen, and they will be better than ever! 🙂🙂

Kingfisher Cooks at Home!

Today’s dish:

Roast salmon, spiced couscous, roasted veg, beetroot salad, cucumber and lemon yoghurt.

1. First, cut and roast veg for the couscous salad. In my recipe I’ve used peppers and carrots, but it will work with whatever you have in the fridge (courgettes, aubergines etc). Drizzle with olive oil, season and roast.

2.  To make the couscous add a small cup of couscous to a bowl, add a teaspoon of olive oil and a teaspoon of paprika and some lemon juice, mix thoroughly then cover with boiling vegetable stock. Set to one side, stirring occasionally.

3. Cook the salmon fillet the way you prefer; grill, poach, steam? I like to pan roast mine and keep it a little pink inside.

4. The yoghurt dressing is made by combining yoghurt, lemon juice, diced cucumber and cracked black pepper.

5. Once the veg is roasted, mix through the couscous.

6. Serve- I’ve added a hand full of baby leaves with beetroot and a side of broccoli.

A festival style of catering

A lot of clients look for a relaxed style of catering to compliment their informal style to their day. The majority of our clients have their reception in a Tipi or Marquee in a field or a venue that has the space to place one. Sometimes they are trying to re create a festival feel, a few have even got engaged at places like Glastonbury and they want their wedding day to mirror that vibe!

So we have lots of menus that compliment this, from “posh’ BBQ, and sharing platters. Both are still served to the table, but with platters and bowls that the guests can pass round and share.

From oven baked Camembert, Anti Pasti and Middle Eastern starters to Carvery with a selection of meats or Ploughman’s for main courses to DIY desserts like Eton Mess and Bannofee Pie! We even do a back to school pudding board complete with Snickers brownie, Rice pudding brûlée, Coconut and jam sponge and Spotted dick and custard!
