Verulam School Crystal Ball

Saturday we catered for the parents at Verulam school for their annual Ball. This is the 4th year we have been invited back to participate in this event.

With a magician, raffle and auction all compared by our favourite MOC Joyce Goodwin, the evening was a huge success, raising thousands for the PTA. Along with a delicious 3 course meal, prepared by John and his team and served by the students.

For starters they choose either braised field mushroom with pecan, sage and blue cheese crumble, pea shoots, garlic aioli or salad of seared duck, pancetta, watercress, pink grapefruit, honey lavender dressing. For main course either rump of lamb, pistachios, mint dauphinoise, sautéed leeks, baby carrots, lamb jus or roasted vegetable and goats cheese open lasagne, herb salad, hazelnut pesto. Dessert was a trio compiled of raspberry crème brûlée, dark chocolate pot, white chocolate Viennese fingers and plum and apple pecan crumble tartlet, crème anglaise. Delicious!

Lots of Wine and Prossecco flowed and the dance floor was packed all evening, a few sore heads on Sunday morning I imagine! Great evening, we look forward to next year!

Bye Bye to our lovely Holly!

A Great weekend we had at Tipis Open Day last weekend, only to be shadowed by the departure of our lovely Holly who has now moved on to full time work after working with us for 4 years. Starting when she first needed a summer job before going to university, she has come back year after year and progressed to a very much valued member of the team. I will miss her greatly as will everyone who has worked with her. Good Luck Holly!

Tipis Open Weekend

Last weekend saw us Hitchin Lavender Farm with Tipis4Hire at their open weekend. Being their preferred catering supplier for over 4 years it is always a productive weekend for us. From canapés to mini burgers of cajan chicken, pulled pork and cheeseburgers, John sent out board upon board of delicious meals which enticed the prospective clients to come and have a chat with us. We met some lovely couples and their families and look forward to hopefully catering for them in 2017 and 2018.
