New Year for us! Some may believe it to be a quiet time, but far from it! With planning and menu tastings in abundance for the coming season the kitchen is as alive as ever! Lots of new delicious dishes are being tried and tasted, so we thought we would share a few.
In January for most healthy eating is underway, salad is being consumed by the ton and the gym shorts have been taken out the back of the closet. January’s the time of year that everyone wants to get back in shape and start looking after themselves, battling that post Christmas bulge. So here’s a great low-fat lunch recipe…
Leek and potato soup with crème fraiche and lemon
1 tbsp olive oil
1 large chopped onion
1 clove of garlic
250g sliced leeks
6 medium-sized potatoes (peeled and chopped)
800ml vegetable stock
150g crème fraiche
Salt and pepper
1tsp chopped thyme leaves (fresh)
Zest of half a lemon
1. In a large saucepan, heat the oil then add the onions and garlic until soft.
2. Add the potatoes and the stock. Simmer for about 5-10 minutes and then add the leeks.
3. Simmer for 10-15 minutes.
4. Puree with a stick blender.
5. Add the crème fraiche, salt and pepper (to taste) and stir in freshly chopped thyme and lemon zest.
6. Serve immediately.
For those who don’t care about a fat-free January, swap the crème fraiche for double cream and serve with a wedge of crusty cheese-topped ciabatta.
Now I know why it tasted so good John! Not real diet food at all!
